E9 PIZZA & BEER WORKS
All 14ish” pies are hand stretched from house made dough, with yeast propagated from our very own Tacoma Wild beer yeast strain, first developed for our brewery, and after many generations of love the starter acclimates to our proprietary blend of local flours and others. The dough has a bulk fermentation of 3 days in both ambient and cooled states and then is individually portioned and fermented for an additional period until cooked in our apple wood burning custom built pizza oven.It results in a unique crust with a slight sour tang and memorable chew that is coupled with a thoughtful and well curated selection of toppings.
